Winter Fajitas

I wanted to make fajitas for my Grandma but couldn't find any peppers or tomatoes at the farmers market in January, so I improvised (with my sister's help) and bought what was in season. The results were wonderful!

4 chicken breasts
1 large bunch of swiss chard (the rainbow kind)
1 large red onion
1 large yellow onion
2 medium sweet potatoes
flour tortillas

Peel the sweet potatoes. Chop everything into 1/2 inch strips. Cook the chicken and sweet potatoes in separate frying pans in a small amount of olive oil. When chicken is almost done add the chard and cook for about two minutes or when it starts to wilt. Add the onions to the sweet potatoes and cook until tender. Put in flour tortillas and top with cheese and sour cream.
