We made this for friends last night and we all agreed it was good - it's a recipe from Let's Dish that I was actually able to remember - it was that easy.
Ingredients:
3 -4 lb pork roast
2 cups green enchilada sauce
2 T chopped jalapeno peppers
1 onion (diced)
2 cloves garlic (diced)
2 tsp salt
1 1/2 cups red kidney beans
cilantro
chedder cheese
tortillas
Directions:
Place first seven ingredients in slow cooker on low for six hours, turn the heat up to high for two final hours. Shred pork roast with two forks. Wrap in tortillas and top with cheese and cilantro. Drink with margaritas.
