We used to go to Cossetta's restaurant once a week when we were in college. Now that we have moved away, I miss the wonderful mostaccoli they made, so I have tried to recreate it with my mom's help. It is still a work in progress, but I like it anyway.
Ingredients:
1 box Mostaccioli noodles
1 jar favorite red sauce
2 T butter or olive oil
2 T flour
2 cups milk
1 small carton ricotta cheese (8-12 oz)
1/2 cup mozzarella cheese
1/2 cup parmesan cheese
salt and pepper to taste
pinch of nutmeg
Directions:
Cook noodles to al dente. Heat red sauce. Melt butter or heat oil in sauce pan, add flour to make a paste, add milk, nutmeg, salt and pepper, and heat until thickened, stirring frequently. Add cheeses. Heat until hot. Add cheese sauce to drained noodles. Top with red sauce.
