Mu Shu Pork Tacos

Place in slow cooker:

3-4 lb Pork Roast
1 cup teriyaki sauce
1 T sesame oil
1 T low sodium soy sauce
2 tsp crushed ginger
2 cloves minced garlic

After pork is cooked add:

2 cups chopped cabbage
1 cup diced carrots
1 cup chopped mushrooms
1 cup bamboo shoots
1 onion, chopped

Sauce to top tortillas:

1 cup hoisin sauce
1 tsp ginger
1 tsp brown sugar
1 tsp sesame oil

Directions:

SLOW-COOKER/PORK & VEGETABLES: Add contents of pork bag along with 1/4 cup water to slow-cooker. Cover and cook on low 6-8 hours or on high 4-6 hours or until pork is tender enough to shred. Remove pork and set on a cutting board. Add the vegetables to the slow-cooker and cover. Using two forks shred pork, add back into the slow cooker and stir. Cover and cook on high 15-20 minutes or until pork and vegetables are hot.
TO SERVE: Heat tortillas in the microwave, just until warm. Spread each tortilla with some of the sauce. Top with the shredded pork and vegetable mixture.
